Pork Chops
w/Balsamic Vinegar and Sweet Peppers
Pork chops
2 tbs olive oil
1 lg onion, sliced
1 each red, yellow, and orange bell pepper, seeded, stemmed, and sliced
Rosemary
Garlic, minced
1/2 c water
3/4 c balsamic
2 tbs cold unsalted butter
2 tbs chopped parsley
1 tbs chopped thyme
Oven at 400, brown chops. Transfer to plate. Add onion, cook 2 mins. Add peppers and rosemary and cook 4 minutes. Add garlic and cook 30 seconds. Add water and vinegar, let boil 7 minutes. Remove from heat, discard rosemary. Nestle chops in peppers and bake 9-10 minutes. Transfer chops to plate, stir cold butter into sauce along with more vinegar if you want it. Serve chops over greens and mashed potatoes, spoon sauce over the top and garnish with parsley and thyme.
