Marinated Tomatoes

  • Tomatoes

  • 1/3 c olive oil

  • 1/3 c red wine vinegar

  • Onion

  • Garlic, crushed and minced

  • Minced Parsley

  • Plenty of basil

  • Salt and pepper

Slice tomatoes, salt, garlic salt, and sugar them, place in a single layer in a shallow dish. Sprinkle with onions. Put the rest of the ingredients in a jar and shake vigorously. Pour over the tomatoes. Cover and marinate for 2-3 hours on the counter or in the fridge 12-24. Bring chilled tomatoes to room temperature before serving.
