Almond Cake w/Kirsch
Top with canned cherries or chocolate shavings or powdered sugar
3/4 c sugar
1/2 c butter
1 7 oz almond paste, broken into pieces
3 large eggs
1 tbs kirsch
1/2 tsp almond extract
1/4 tsp salt
1/3 c flour
1/2 tsp baking powder
Powdered sugar, for dusting
Oven at 350. Butter and flour a cake pan, line with parchment. Beat sugar and butter until light and fluffy. Add almond paste one piece at a time, beating well after each addition. Beat in eggs, one at a time. Add kirsch, almond extract, and salt. Add flour and baking powder to small bowl and combine; turn into batter until just combined. Spoon batter into pan, smooth top. Bake about 35 minutes. Cool and dust with powdered sugar. Stores well.
